My favorite meal to make at night is pasta. It’s hearty and decadent and relatively easy to make. So last night I made pasta. Pretty counter intuitive especially because I just did a big ab day at the gym but hey it’s what I was craving and I’m not one to deny myself a good home cooked meal.
I decided to make myself a recipe my mom used to make me:
Ingredients:
6 garlic cloves: chopped finely
a quarter of an onion: chopped finely
one tomato: chopped
half of a red bell pepper: finely chopped
califlower floretts
a box of pre-sliced mushrooms
macaroni pasta
Arrabiata sauce
Fresh basil
Parmasian cheese
bread crumbs
skinnless, boneless, chicken breast cut into thin strips
Paprika
Salt and pepper to taste
grapeseed oil
olive oil cooking spray
Directions:
Cook the garlic and onions together. Once the onions are see through, add the bell pepper, cauliflower and tomatoes and cook for 10 more minutes in medium heat. Add mushrooms and cook for 5 to 7 more minutes and set aside. In a different pan sautee the bread crumbs and set aide. In a large pot bring water and a pinch of salt to a boil. Add pasta and cook until al dente.
In a bowl add a tablespoon of grape-seed oil and the breadcrumbs and dip the chicken strips in the mixture and cook in a pan that you’ve sprayed with olive oil cooking spray.
Once the pasta is cooked, strain it and and add to the cooked vegetable mixture along with your desired amount of Arrabiata sauce (salt and pepper to taste if needed). Top with Parmesan cheese and fresh basil before serving.
