If you’re looking for a low-calorie, healthy breakfast or just a sweet treat with all the flavor and none of the guilt, this recipe is one to try. Sometimes, I am just craving that carby-texture of pancakes, muffins, and breads in the morning, but I’m really not all about the carbs and sugars that come with it.
These muffins are a favorite of mine because they are simple to make, healthy to eat and satisfy my cravings without the guilt or bloat from traditional muffins and pancakes. Dairy and gluten free, these are friendly for those with allergies or who just prefer the flavor.
Sweetened only with raw, local honey (which is actually good for you;), these muffins are the perfect amount of sweet. Use this recipe for a delicious and healthy twist on traditional muffins or pancakes.
Ingredients:
1 1/2 c peeled chopped apples or applesauce
6 eggs (room temperature, so as not to solidify the coconut oil)
1/2 c melted butter or coconut oil
1/2 c honey
1 TBS vanilla
3/4 c coconut flour
1/2 tsp salt
1/2 tsp soda
1 tsp cinnamon
Pinch nutmeg
Simple Steps:
- Preheat oven to 350
- Mix eggs, oil, honey, and vanilla together
- Mix dry ingredients in a separate bowl
- Add wet to dry fold in apples. Pour into greased muffin pans (I use silicone liners).
- Bake for 25 minutes or until golden brown.
