Breakfast is my favorite meal of the day. So I figured I would share one of my favorite, quick and easy breakfast recepies for you guys to try. I’m all about easy cooking and most importantly easy clean up, so I try to keep it as simple as possible.
The ingredients:
Start off with some two multigrain bread slices and toast them to your desired crunchiness. I like to spread a very light amount of honey butter on them for a little sweetness but if you are very health conscious leave it out.
Then spread some goat cheese on the slices while the bread is still warm
In another pan, spray some sunflower oil and crack your first egg into the pan. I like to use a little rounded egg pan for a perfectly rounded egg but really the shape and presentation doesn’t matter.
Next, add some white or black pepper, salt, and I like to use some smoked paprika.
Then, add a couple slices of your favorite meet. It can be left overs or just a deli slice of salami or turkey.
All thats left is to crack another egg on top of that and let it cook a min or two. (A little trick you can do is add a little water to the pan and cover it so the top of your egg not facing the pan will cook as well and get that light white crust on the yolk.) I also like to take a fork and smash down the yolk for a flatter surface but you don’t have to. The advantage of using an egg pan like this is that you can close it and flip it so the egg cooks perfectly on both sides but don’t forget to spray oil on both the sides so it doesn’t stick when you flip it.
Once your eggs are cooked put them on the first bread slice and I like to top it with a bit of sliced tomatoes and hot sauce and top with the second piece of toast.
Now your ready to eat! Easy right?
