This is my go to steak and veggie recipe when I’m in a hurry. I don’t even use a grill so all you need is two pans and the ingredients.
I like to use whatever veggies I might have in the fridge as long as I start with a base of cut up onions, bell peppers and tomatoes. The other veggies I usually throw in there asparagus (cut the top half of it and throw away the bottoms of the stalks), broccolini, mushrooms and olives depending on what’s in my fridge at the moment.
I’ve been kind of obsessed with broccolini lately because I got sick of broccoli. It still has the added benefits of broccoli but it’s a tad sweeeter. Give it a try for something different.
Now back to the recipe. Throw all the veggies you want to make in a pan with some olive oil and let them cook for 15 minutes on a low-medium heat. You want the onions to be translucent, the mushrooms to be soft and tender, the bell peppers to be not crunchy and the asparagus and brocolini to whatever consistency you enjoy.
While your veggies are cooking heat up another pan. Turn the over to 400 degrees and the stove on and let the pan heat really hot. Make sure while your pan is heating you have your piece of steak out and I usually marinate it with some red wine and spices while the pan is heating up and the veggies are cooking. Once your pan is hot salt and pepper the steak and place it on the pan. You want to sear the meat on all sides to a crusty brown but don’t burn it. Once you’ve achieved a good color on all sides take the pan and pop it in the pre-heated oven. If you’re not too calorie conscious, top the steak with a piece of butter (I like to use cilantro compound butter). Trust me it will make it taste ten times better! You’re gonna let that cook for about 10-15 minutes depending on how you like your meat. I eat it medium to medium well so that usually takes about 15 minutes but this will depend on your over, the thickness and cut of your meat and the altitude at which your cooking at.
While your meet is cooking your veggies should be close to being done. Make sure you add salt and pepper to taste and I like to add some curated garlic. You can always add a base sauce like Sofrito or teriaky sauce but I like to keep it simple if I’m gonna make the steak more flavorful. You don’t want to have your flavor a competing with one another. You want them to compliment one another.
Make sure you constantly check you steak so you don’t over cook it. A good trick if you are impatient is butterflying the steak (cut into the steak with a nice to allow the heat to penetrate it faster) but slow and steady wins the race in my opinion.
Take your veggies off the stove and pull out your meat from the oven. You can make a quick salad to accompany your meal or just stick with what you have. Unless you burn your veggies or over cook your steak there is no way to mess this up. But be careful when you take out the steak from the oven! Because it’s in a pan you forget to use a oven mit and I’ve burnt myself pretty bad in the past because I was in a hurry and not thinking.
