Weekly Tips: My healthier version of a Quiche

The other day I found myself about to start breakfast but not really sure what I was gonna make. I knew I had to feed my roommate and myself and that it had to be relatively healthy. Looking in my fridge and pantry, I realized I could make a version of a quiche using potatoes instead of a pie crust.

I always have rice and potatoes laying around because they are easy to cook and so versatile. I loved this version of the quiche so much, I’ve made it a few more times after that.
