Today I wanted to share my sister-in-law’s no-bake energy bites recipe. I love having these around as a healthy snack, plus they are extremely easy to make.
Ingredients:
1 cup old-fashioned oats (didn’t have any, so I used maple brown sugar oatmeal packets x2)
⅔ cup sweetened toasted shredded coconut
½ cup honey roasted peanut butter
½ cup ground flaxseed
2 tablespoons chia seeds
½ cup chocolate chips
⅓ cup honey1 teaspoon vanilla extract
Directions:
1. Stir all ingredients together in a large mixing bowl until everything is combined
2. Roll ingredients into balls and place in a sealed container
3. Place container into the refrigerator for 1-2 hours until chilled helping energy bites stay intact
4. Serve immediately or refrigerate in a sealed container up to 1 week or freeze up to 3 months
These no-bake energy bites are a great snack before or after a workout or just as a snack. They are a healthy, filling snack loaded with protein, healthy fats, and a ton of fiber!
