Peanut Butter Cookies ( no butter…the kind from the cow ,yo!)

My lovely friend and insanely talented chef Nicole Gomez has allowed me to share some of her delicious recipes for healthy snacks. Here’s one:


  • Ingredients
    1 cup organic coconut oil
    2 cup crunchy peanut butter
    1 cup white sugar
    1 cup packed brown sugar
    3 eggs
    3 cups all-purpose flour
    1 1/2 teaspoon baking powder
    1/2 teaspoon salt
    1 1/2 teaspoons baking soda


  • Directions
    Cream coconut oil, peanut butter, and sugars together in a bowl then add eggs 1 at a time.
    In a separate bowl, sift flour, baking powder, baking soda, and salt, slowly stir into coconut oil mixture.
    Put dough in refrigerator for 1 hour.

    Roll dough into 2 inch balls and put on baking sheets. Flatten each ball with a fork, making a crisscross pattern.Bake in a preheated 375 degrees F oven for about 14 minutes or until cookies begin to brown. Remove baking sheet from the oven let cookies rest for 4 minutes then serve.
