We all have those days when we know the night before that we’re gonna be rushing in the morning and late to wherever we’re going. I thought this would be a good time to post this because a lot of us are busy with Halloween festivities and we’re also all trying to look cute in our costumes. This quick healthy breakfast is for those mornings. Fancy oatmeal in a to-go coffee cup!
I like this because it’s really healthy and I can make it the night before and literally just grab it as I run out the door. I buy the to-go coffee cups and use just the cup part for this breakfast. I save all the lids because they make perfect little trays for mixing foundation. It works out perfectly. I had looked for a long time to find something to mix my make up on and I didn’t like having to wash something every time and I didn’t wanna buy plastic coasters or something that I was just going to waste. I always end up lucky and have just enough cups as I do tops, so i guess I eat oatmeal about the same amount of days I wear make up.
Here’s the quick recipe for the night before. You’ll start with half of the cup with plain uncooked oatmeal. The rest is pretty optional. I would do any combination of 3 or 4 teaspoons of these ingredients. I usually do brown sugar, chia or flax and then one nut and one fruit. I mix it up each day so I don’t get sick of the same thing. Chop everything pretty finely, especially the dried fruit because it can be harder to chew. Make everything about the size of a peanut or smaller. Add you mix ins to the cup and go to bed.

prunes
chopped macadamia nuts
chopped almonds
cashews
chopped walnuts
cranberries
brown or yellow raisins
dried blueberries
dried mango
dried apple
dried strawberries
mulberries (They’re a trendy super fruit right now. I’m not sure I buy into any of the hyped up super fruits. They do have some nutritional value, however I’m not sure that they are “super.” They’re really good in there.)
In the morning I fill the paper cup with almond milk so it’s almost to the top and stir it. You can use regular milk or whichever milk substitute you prefer. I let it sit for a minute so the chia can absorb the milk while I get the coffee going. Then pop the paper cup in the microwave for 30 seconds and both my coffee and oatmeal are done at the same time and I can run out the door with a quick healthy breakfast in about a minute! Enjoy!
