Ingredients
1 Whole Organic Chicken
1 Full Stalk/Bunch of Organic Celery
8-10 Whole, Organic Carrots
1 Full Onion
Salt to taste
Pepper to taste
Oregano and other desired seasonings to taste
Directions
- Place the full chicken in boiling water for approximately 1 hour, or until the chicken is no longer pink inside.
- Meanwhile, chop carrots, celery, and onion and set aside. Add garlic, oregano, pepper, and salt to boiling water.
- Add chopped carrots, celery, and onion to the pot, and reduce to a simmer. Cover slightly with lid.
- Continue to cook until the chicken meat falls off of the bones, and the veggies are at the desired tenderness. Approximately 2 hours. Occasionally skim off the foam from the top.
