Simple & Savory Homemade Chicken Soup

1 Whole Organic Chicken

1 Full Stalk/Bunch of Organic Celery

8-10 Whole, Organic Carrots

1 Full Onion

Salt to taste

Pepper to taste

Oregano and other desired seasonings to taste

  1. Place the full chicken in boiling water for approximately 1 hour, or until the chicken is no longer pink inside. 
  2. Meanwhile, chop carrots, celery, and onion and set aside. Add garlic, oregano, pepper, and salt to boiling water.
  3. Add chopped carrots, celery, and onion to the pot, and reduce to a simmer. Cover slightly with lid.
  4. Continue to cook until the chicken meat falls off of the bones, and the veggies are at the desired tenderness. Approximately 2 hours. Occasionally skim off the foam from the top.
